Crema de Quinoa

IMG_3779When I’m asked how I decided what to post, I always say that one recipe leads to another.  But that’s only half a truth.  More specifically, it comes down to what was left and what I can make of it.  This chowder, for one, started with a recipe for quinoa croquettes.  With the croquettes done and quinoa to spare, I started looking for more ways to use it and came across this recipe in Jose Garces’ Latin Road HomeI was most drawn to the ingredient list featuring staples I always have but never seem to use completely – heavy cream, parsley, the odd potato.  This also meant picking up a few extras quarts of vegetable stock and pulling fresh corn from the dwindling piles at the market.  I followed the recipe as closely as possible the first time around including the fried potatoes, and crumbled bacon.  When it was finished, I realized I had a almost enough left to make a second batch.  I was going into a busy week and knew I’d be rewarming it over a few nights, so I made a vegetarian version.  Also, I was out of bacon.  Instead of using the achiote paste that’s been living in my refrigerator for years with no expiration in site, I used the last of my achiote seeds to make the oil.  The chives became scallions, and I added the cream at the end to finish off the pint.  The one thing I didn’t get to was the fresh  ají costeño pepper sauce Garces suggests, but that will have to wait for the next round.

Quinotto de Champiñones

I usually dread fall-back but I’ve been looking forward to daylight savings for weeks. Normally a morning person, getting up in the pitch black, confusing the still bright streetlamps with my alarm clock, and starting every day with the say-it-aint-sos was really getting to me. For once, I was willing to trade darker afternoons for brighter mornings. Of course, playing mind games with the sun has its price. As someone with penchant for photographing their food, I’m sure I’ll be cursing the change when I’m trying to get a decent picture at 3-o’-clock in the afternoon. Grilled Corn and Quinoa Salad

The last couple of weeks I’ve been indulging in early Saturday market runs. Loaded down with corn, currants, peaches and herbs, I head home with my haul, spread it out then have a moment of what now. As inspring as the weekend farmer’s market can be, sometimes the summer goes to my head and I overbuy (or just haven’t found a gooseberry recipe to love). That’s partly why I was so happy to make this grilled corn and quinoa salad, the first recipe I’ve tried from Lourdes Castro’s new book,  Latin Grilling. Read more

Catching Up in March

March has been such a whirl that I made it all the way to April before I could stop and catch my breath. It started well with my first contribution to the Cooking Channel’s Devour the Blog  and it was great to see so many of you making the jump. A new post on stocking my Latin pantry went up yesterday with more to follow. I laid my cupboard bare (well I straightened it up first) so I hope you’ll visit the site again and let us know what’s in yours.  I also wrote a piece about Latin American staples – Running with the Grains –  for Marcus Samuelsson‘s Food Republic that combines two favorite obsessions – seeking out new ingredients and running till I just can’t anymore.  A new site covering everyone from Junot Diaz to Michelle Bernstein (who also helps spices up school lunches here), I was thrilled to be a part of their launch this week. Soufflé de Quinoa

Nothing takes the fear out of making a soufflé like making three in a row.  I found a recipe for one combined with amaranth that I couldn’t wait to try.  My training for this year’s New York City marathon is nearing the 20-mile mark so I’ve been cooking up batches of  amaranth to have on hand for cereal topped with honey and fruit.  While adding eggs and cheese may not be the best way to enjoy my vitamin high grain, it sounded wonderful and I’d been so good. Future Plans

I noticed that I’ve been dessert heavy lately when even my WiiFit avatar plumped up a little.  I wanted to make something light to get through a heavy week and found this recipe for quinoa pilaf on Yanuq, my favorite Peruvian food site.  Each time I go to it, I find something familiar and healthy but with a twist that I can’t wait to try.  The Read more
