Why Cocina Latina
When I started writing, I hadn’t planned to focus on Latin food, an enormous subject that’s difficult to define. I had just wanted to teach myself how to cook well. It was natural that I should start with Cuban food since it’s where I’d left off. Besides, in any other cuisine, I could only hope to be a tourist, or at best, a traveler. But as I sought out the recipes and foods I remembered, I kept coming across other Latin cuisines that had been fused beyond recognition. If I was surprised to find Cuban restaurants in name only serving Mexican food, what would a Mexican think? What’s being lost? Where are the stories behind the differences between us? Argentina, Chile, Brazil, Puerto Rico, Mexico, Spain, Colombia…Now that I’ve started pulling threads, I can’t stop.

Why cocina Latina? Because it is the best food out there; we can make rice and beans in so many ways you can never go hungry, and don’t forget the meat either. LOL
I was born and raised in Panama, so comida Latina was a daily staple. Every kind of beans were served with rice every single day, delicious!
