		<description><![CDATA[LOVE THIS BLOG. Inspires me to keep running so I can stay in shape should I come accross some of these yummy dishes... I love &quot;Camarones Enchilados&quot;.  My Mom makes it delicious though very traditional.  I have a friend that precooks the shrimp in the oven for about 10 minutes in a mixture of beer, garlic and cumin, then throws them in at the end.  The beer tenderizes the shrimp so they are not tough.  YUMMMMMMY! Throw in some Cuban style white rice and very ripe Maduros and I AM IN for the night (top button unbuttoned, of course... LOL)]]></description>
